Cozumel Chicharrón en Salsa Verde

(Chicharrón in Green Sauce)

Ingredients:
1/4 kg. of Chicharrón de Coritos
10 Green Tomatillos
3 or more Serrano or Jalapeno Chilies
2 or more cloves of Garlic 
1/2 Onion
8 sprigs of Cilantro
Salt to taste
Oil to taste

Chicharrón

Chicharrón is a dish generally consisting of fried pork belly or fried pork rinds; Chicharrón may also be made from chicken, mutton, or beef.

Tomatillo

 

The Tomatillo, also known as the Mexican husk tomato, is a plant of the nightshade family bearing small, spherical and green or green-purple fruit of the same name.

Preparation:

Remove Shells from the Tomatillos, rinse, and cook in a pan water along with the chiles.
Once they are cooked, move everything (water and all) to a blender, add onion, garlic, and cilantro and liquefy.
Place oil in a large pan or pot and heat.
Once pan is hot, add your mixture and bring to a boil. Once boiling add chicharron cut to bite size pieces, Salt to taste.
If sauce becomes too thick, add hot water. Lower the flame and let it simmer. When it boils again, it is cooked.
This dish is delicious accompanied by beans, in a Burritos or in a Gorditas.

Receta en Español:

Qué necesito:

1/4 kg. de chicharrón de cueritos
10 tomatillos verdes
3 ó más chiles serranos o jalapeños
2 ó más dientes de ajo
1/2 cebolla
8 ramitas de cilantro
sal al gusto
aceite

Cómo lo hago:

Se quitan las cáscaras a los tomatillos, se enjuagan y se cuecen en un traste con agua junto con los chiles. Ya que están cocidos se pasan a la licuadora junto con la cebolla, el ajo y el cilantro, usando la misma agua en que se cocieron los tomatillos y el chile se procede a licuar todo. En una cazuela se pone aceite al gusto y cuando ya está caliente se vacía todo lo que se licuo. Al momento en que la salsa hierve se le agrega el chicharrón en trozos no muy grandes. Se le agrega sal. En caso de que la salsa quede espesa se agrega agua caliente. Se baja la flama y se deja el chicharrón hasta que hierve todo el guisado. Este platillo es delicioso acompañado de frijoles o bien en burritos o gorditas.
