Red Chilaquiles
Ingredients:
½ kg. Of cold Tortillas
Grated Cheese to taste
½ finely chopped Onion
100 g. Chili Colorado
Oil
Salt to taste
1 Garlic

Preparation:
Cut the tortillas into triangles and fry.
Cook the Chile Colorado and liquefy in blender with the garlic and salt.
Place the tortillas in layers in a high saucepan, a layer of tortilla, a layer of cheese and a layer of Onions. Repeat the layers until you are out of ingredients/space. Bathe the layers in the Colorado Chile Sauce. Soak the tortillas well. Let it boil until the cheese melts and half of the Chile Sauce has been absorbed. Serve with refried beans.

Cómo lo hago:
Corta en cuadros las tortillas y fríelas, cuece el chile Colorado y licúalo con el ajo y sal, acomoda las tortillas en capas en un sartén alto, una capa de tortilla, queso y cebolla, otra capa de tortillas, queso y cebolla, así sucesivamente hasta terminar con queso, baña con el chile Colorado, debe de quedar caldoso para que remoje bien las tortillas. Deja hervir hasta que se derrita el queso y el chile se haya consumido a la mitad, sirve con frijoles refritos.
