Mexico to Regulate School Foods

Information from Mexico News Daily

Childhood obesity statistics in Mexico

It is estimated that between 7 and 8% of infants (1-5 years old), 37.3% of school-age children (5–11 years old) and over 40% of adolescents (12–19 years old) are overweight or obese in Mexico. Meanwhile, 12% of children under five years of age show signs of malnutrition. (According to the latest results from the National Health and Nutrition Survey (ENSANUT, 2023)

What are the new rules for food in schools?

President Sheinbaum presented new regulations (published in the Official Gazette of the Federation (DOF) on Sept. 30), aimed at ensuring nutrition and health for students in Mexico.

The New Requirements:

Foods must be of natural origin or minimally processed.

Seasonal fruits and vegetables must be offered.

Only poultry is allowed and must be prepared without fat and skin.

These foods should be cooked using minimal sugar and oil.

Access to drinking water must be guaranteed, free of charge.

    Caffeinated drinks are prohibited.

The new rules will become effective on March 29, 2025, and will be mandatory throughout the National Education System. Schools that do not comply will be subject to fines of between 545 and 5,450 pesos.

    Pan De Muertos

    Cozumel News October 25

Pan de Muerto, or “Bread of the Dead,” is a sweet bread. This bread is baked during Dia de Los Muertos, celebrated in Mexico on November first and second. Every Grocery store in Cozumel will have tons of this bread displayed this week.

    Make it Yourself

However, if you are ambitious, you can make your own Day of the Dead bread. This recipe takes 3 hours and 40 minutes and yields twenty slices. Here is one of many recipes that can be found online:

    Ingredients

    1. 1⁄2 cups of flour

    2. 1⁄2    cup of sugar

    3. 1 teaspoon of salt

    4. 2   tablespoons of dry yeast

    5. 1⁄2     cup of milk

    6. 1⁄2    cup of water

    7. 1⁄2     cup of butter

    8. 4       eggs

    9. 4 1⁄2   cups of flour

    10. 1⁄2   cup of sugar

    11. 1⁄3    cup of Orange juice

    Directions

Mix all dry ingredients together except the 4 1/2 cups of flour. In small pan, heat the milk, the water, and the butter. Add liquid mixture to the dry mixture. Beat well. Mix in the eggs and 1 1/2 cups of flour. Beat well. Put in the rest of flour, little by little. Knead the mixture for 10 minutes. Put dough in bowl and allow it to rise until it has doubled in size, or about an hour and a half. Punch dough down and reshape it with some “bone” shapes on top to decorate it. Let rise another hour. Heat 1/2 cup sugar and the one-third orange juice over stove until melted. Brush over the dough. Bake at 350°F for about 40 minutes.
