At-least once per month our recipe of the week will be Diabetic Friendly. Chicken and Cheese Quesadillas is a healthy choice. In our home in Cozumel, Mexico, we alternate using the chili and cumin with a simple seasoning of black pepper, fresh garlic, onion powder, and a little bit of Sea Salt. Any reduced fat cheese will do. Quesadillas are fast/easy to make, healthy, and a good choice on a hot day!
1 1/2 cup Onion, Bell Peppers, Celery, and Parsley. Here in the island of Cozumel we use all FRESH ingredients. For extra taste and a prettier presentation use a Green, Orange, and Yellow Bell Peppers mix. (You may substitute Frozen, no salt added vegetables in this recipe.)
2 (6-ounce) Boneless, Skinless Chicken Breast halves, cut into strips. We purchase a whole chicken, wash, cut, season, and divide per our planned meals. We store the pre seasoned chicken in freezer bags and either leave in the refrigerator for use later that day or preferably, the next day, or store in the freezer for later in the week. This is the economical way to go for individuals or small families.
1/2 teaspoon Chili powder and 1/2 teaspoon Cumin
OR:
Fresh Garlic or Garlic Powder, Black Pepper, Onion Powder, and a dab of Sea Salt. (These are the very same ingredients we use to preseason our meats).
8 (8-inch) low-carb whole wheat tortillas
1 cup reduced-fat shredded Cheddar cheese or any other low fat cheese.
Coat a medium skillet with cooking spray or Olive Oil. Sautee your chicken strips until juice is sealed in. Add Vegetables and choice of seasoning. Cook over medium-high heat until tender and cooked through. Remove chicken mixture and wipe skillet with paper towels. Coat pan with a cooking spray.
On each of 4 tortillas, spoon one-quarter of chicken mixture, top with cheese and cover with another tortilla.
Cook each quesadilla in skillet, turning to cook on both sides until lightly browned. Spray additional cooking spray as needed. Cut each quesadilla into 4 wedges and serve immediately.
Suggested garnishes: Sour cream, Salad, Avocado or Guacamole, and Pico de Gallo. Enjoy!
